Ingredients
- 1 Full Bag of Large Red Kidney Beans
- 2 Packages of Smoked Turkey Sausage (4 Long Links
Total)
- 1 Frozen Bag of Seasoning Blend (literally, it is
called "seasoning blend")
- 2-3 Cups of Beef or Chicken Stock
- 2 Bay Leaves
- 2 Bags Cauliflower Rice (store bought, or see bottom of
post for how to prepare from scratch)
- Cajun Seasoning
- Salt and Pepper
To
Make
- Slice up all the turkey sausage
- Using a large crock-pot, pour in entire bag of red
beans, followed by all the other ingredients minus the cauliflower rice
- Stir the mixture so that everything is submerged in the
beef or chicken stock, add water if needed.
- Add generous amounts of the Cajun seasoning and salt
and pepper, but we will add more to taste when it is cooked.
- Cook on Low for 5-8 hours, stirring as needed
- It is ready when the beans are so well cooked that the
mixture has a gravy-like consistency. Season to desired taste!
- Steam cauliflower rice and serve!
**Directions
on how to make cauliflower rice from scratch**
-Using a full head of fresh
cauliflower, separate the florets from the base
-Throw the florets in a food
processor or high powered blender
-Chop on high until the raw
cauliflower is in small square-like particles
-Heat a drizzle of oil in a large
skillet
-Add cauliflower and cook it just
like you would taco meat. (making sure to keep the cauliflower flat and
shallow, flipping sections as they cook and chopping apart with a spatula to
keep the rice consistency)
-Season with salt and pepper to
taste
