Faux Fried Chicken Tenders



This recipe is for nights when you want to quit your diet and eat something terrible for you. Luckily, this tastes like the real thing, but might actually be one of the healthiest meals you'll ever make yourself.


Ingredients

-Raw, thawed out chicken tenders
-1 cup almond or coconut flour
-1 box of superfood crackers (Check out organic isle at Kroger or Whole Foods. Pick out crackers that have "sprouted grains", "Chia," "quinoa," or any other super seeds in them. Jilz Crackerz available at Whole Foods are my go-to).
-3 eggs (beaten)
-Seasonings: Basil, rosemary, salt, pepper, creole, garlic powder.

To bake:


-Preheat oven to 400

-If you have a food processor: Pour crackers, cup of flour, and seasonings in and blend until everything is combined in a flour like consistency.

-If you don't have a food processor: Pour crackers into a blender and blend until they are crumbs, then add flour and seasonings and blend again to combine.

-Transfer the flour mixture into a large bowl

-Beat 3 eggs in a container large enough to fit a chicken tender.

-Grease a pan or glass baking pan and set it next to your crumbs.

-Take a chicken tender and submerge it into the egg and then put it into your flour mixture and cover it. Repeat this cycle on each tender twice if you prefer a lot of breading on your chicken.

-As you finish "battering" each tender place it on the baking pan.

-Bake tenders for 25 minutes and serve with a dip of your choice!

Side Note: You can make these as spicy as you like! Just add whatever seasonings to the flour mixture you desire! I also like to serve these in a low-cal version of honey mustard. (one part agave, one part Dijon mustard, mix and add agave for desired sweetness).
